To make my recipe even more satisfying, I substitute the traditional eggs and dairy with a low carb almond flour crust and a mixture of shredded egg and leftover chicken. The end result is a light, flaky, crusty, creamy and delicious quiche. It makes a great breakfast or snack, and it’s perfect for a midday lunch. You’ll love it.
I am a huge fan of the ketogenic diet or keto diet for short. It is a diet that has been proven to aid in weight loss and overall health. Though it has numerous benefits, it also has a few drawbacks. One of these drawbacks is the ability to get a lot of fat, which is needed to make keto friendly foods. Another drawback is low-carb baked goods, which are the main downfall of the keto diet. So, what do you do if you are looking to make keto friendly baked goods that are not carb-heavy (for example, no bread or pasta) but still taste amazing and are easily accessible? You make keto quiche.
This is keto quiche, which I think is the best way I know how to make it. It’s really easy to make and it tastes good. This is the keto version and I use chicken broth instead of heavy cream.

In any recipe, a good foundation is essential, and this one asks for a delicious low-carb crust. Some people want to go all out, and I’m one of them, but we kept it basic with crumbled bacon and shredded cheddar cheese in this McGriddle replica. McGriddle Style Keto Quiche

Preheat the oven to 375 degrees Fahrenheit.
Transfer the cold pie dough to your pie/tart pan between two sheets of parchment paper. Remove any excess crust and form it to the sides of the pan.
To prevent the crust from ballooning, line the inside of the pie crust with a square of parchment paper and fill to the edges with pie weights or use another oven safe pan/pot (as seen in the video).
Bake for 15 minutes, or until the crust is pale brown. Allow to cool after removing from the oven. Reduce the oven temperature to 350 degrees Fahrenheit.
In a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper. Blend with a hand mixer until everything is well blended.
In the bottom of the pie crust, layer the bacon and cheese, then pour the egg mixture on top.
If the edges are highly exposed, cover them with foil or a pie crust shield, and bake for 40-45 minutes, or until a knife stabbed 2 inches from the edge comes out clean.
Although the center will be established, it will still be jiggly. Allow 10 minutes for cooling before cutting and serving.
Refrigerate for up to 5 days in a glass jar.
