I love making quiche. It’s one of my favorite things to make, because it’s so easy and a super satisfying fix. It’s also delicious when I make it from scratch on a crusty, flaky, buttery base. To make my recipe even more satisfying, I substitute the traditional eggs and dairy with a low carb almond flour crust and a mixture of shredded egg and leftover chicken. The end result is a light, flaky, crusty, creamy and delicious quiche. It makes a great breakfast or snack, and it’s perfect for a midday lunch. You’ll love it.

I am a huge fan of the ketogenic diet or keto diet for short. It is a diet that has been proven to aid in weight loss and overall health. Though it has numerous benefits, it also has a few drawbacks. One of these drawbacks is the ability to get a lot of fat, which is needed to make keto friendly foods. Another drawback is low-carb baked goods, which are the main downfall of the keto diet. So, what do you do if you are looking to make keto friendly baked goods that are not carb-heavy (for example, no bread or pasta) but still taste amazing and are easily accessible? You make keto quiche.

This is keto quiche, which I think is the best way I know how to make it. It’s really easy to make and it tastes good. This is the keto version and I use chicken broth instead of heavy cream.

Everyone grew up eating McDonald’s, so what better way to spice up breakfast than with a keto quiche prepared in the McGriddle style? While I grew up on McDonald’s orange juice, hash browns, and pancakes, Matt always got the McGriddle, and now that I’ve tried this dish, I feel like I’ve been missing out!

Follow the steps below to make the ideal keto quiche in the McGriddle style!

Discover the Ideal Low-Carb Crust

In any recipe, a good foundation is essential, and this one asks for a delicious low-carb crust. A crust is required when attempting to produce a healthier, tastier version of the McDonalds McGriddle. So we dug out our tried-and-true, sweet and dense low-carb pie crust and used it to create your new favorite keto recipe! If you want to get ahead on this keto quiche, you can easily prepare the pie crust ahead of time and freeze it for up to a month or refrigerate it for up to three days. It just takes about 30 minutes!

To make the quiche filling, combine all of the ingredients in a mixing bowl.

Finding the appropriate ratio of egg to heavy cream is the secret to a good quiche filling, and I guarantee you’ll be surprised at what that ratio is. I first assumed that using more eggs would be the greatest option, but I’ve since realized that a larger amount of the filling should be made of heavy cream. This gives the filling a creamier, softer texture. A 4:1 ratio creates the ideal filling basis without overloading the other ingredients with egg flavor.

Keep the add-ons as simple as possible.

All that’s left to do now is choose your add-ins before we put it all together. Some people want to go all out, and I’m one of them, but we kept it basic with crumbled bacon and shredded cheddar cheese in this McGriddle replica. The delicately sweet crust and creamy filling, as well as the salty bacon and cheese, are all enhanced by keeping it simple. The ideal filling ratio is between two and three add-ins. It highlights all of the varied flavors and textures evenly and won’t overload your taste senses!

If you don’t use pie weights, you’ll need to poke holes in the crust to keep it from rising and cracking. After the crust has baked and cooled, layer your add-ins in the bottom and pour the cream and egg mixture on top. For family and friends, bake, cool, and slice. That’s all there is to it! McGriddle Style Keto Quiche

  • Preheat the oven to 375 degrees Fahrenheit.

  • Transfer the cold pie dough to your pie/tart pan between two sheets of parchment paper. Remove any excess crust and form it to the sides of the pan.

  • To prevent the crust from ballooning, line the inside of the pie crust with a square of parchment paper and fill to the edges with pie weights or use another oven safe pan/pot (as seen in the video).

  • Bake for 15 minutes, or until the crust is pale brown. Allow to cool after removing from the oven. Reduce the oven temperature to 350 degrees Fahrenheit.


  • In a large mixing bowl, whisk together the eggs, heavy cream, salt, and pepper. Blend with a hand mixer until everything is well blended.

  • In the bottom of the pie crust, layer the bacon and cheese, then pour the egg mixture on top.

  • If the edges are highly exposed, cover them with foil or a pie crust shield, and bake for 40-45 minutes, or until a knife stabbed 2 inches from the edge comes out clean.

  • Although the center will be established, it will still be jiggly. Allow 10 minutes for cooling before cutting and serving.

  • Refrigerate for up to 5 days in a glass jar.
