It’s one of my favorite meals, which is why I recently made a keto version of it that you can try out. This recipe is a great side dish, lunch, or dinner.

It has a fabulous balance of flavors and textures, with a bit of spice that contrasts with the sweetness that comes from the coconut cream sauce. This is one of the best keto pad thai recipes!

The keto diet is typically recommended for type two diabetics and those who are obese. It’s not for everyone, but it’s one of my favorite diets. I feel great and can’t believe how well I’m doing on it.

 Making this Pad Thai Keto dish sent me back in time two years. Matthew was a simple guy when I met him in San Francisco. He was a creature of habit, and ate the same couple of foods on a weekly basis. Pad Thai Keto is the fourth recipe from my Asian-inspired weekend.

 I had planned on cooking my favorite Asian meals while Matthew was gone, but I couldn’t be selfish for the whole weekend. I decided to prepare a Keto Pad Thai for him as a surprise when he came home! He adored it, as anticipated. The Tofu Shirataki Noodles are used in this dish, and when cooked properly, they mimic spaghetti in every way! I could eat these at every meal if I wanted to! This Keto Pad Thai is just as tasty as the carb-heavy original, plus you’ll appreciate how simple it is to make.

  • Drain Shirataki noodles and cook for 10 minutes in a pan over medium-high heat. Remove from the equation.

  • Carrot, bell pepper, and onion should all be thinly sliced. Remove from the equation.

  • Cut the chicken thigh into long strips, much like the veggies. In a pan, heat the coconut oil and cook the chicken until it is completely cooked.

  • Heat the cut veggies with the chicken for 3-5 minutes. Scramble the egg in with the chicken and veggies.

  • Toss the chicken and veggies with the noodles.

  • To make the sauce, whisk together all of the ingredients and pour over the noodle mixture.

  • Mix thoroughly. Toss in the green onions and peanuts. Warm it up and enjoy it!
